Grilled Corn with Cilantro-Lime Butter

Ingredients
8 ears of fresh corn in husks, outer layer of husks discarded or torn into strips for tying corn
Method
Prepare grill.

Peel back corn husks carefully, without breaking off, and discard silks. Fold husks back into place and tie ends together with strips of outer husk or kitchen string. In large bowls cover corn with cold water and soak 10 minutes. Drain corn and grill on a rack set 5 to 6 inches over glowing coals, turning occasionally, 15 minutes.

Cilantro-Lime Butter
2 Tablespoon unsalted butter, room temperature (slightly softened)
2 Tablespoon chopped cilantro, packed
1 Tablespoon fresh squeezed lime juice
ΒΌ teaspoon salt
Method
Mix together butter, cilantro, lime juice and salt in a small bowl.  Spread over grilled corn.

Can also be served by cutting the corn off the cobs and tossing with the cilantro-lime butter.
